Plum Tart

1 pie crust recipe

3-4 ripe plums, halved and sliced thinly

1 teaspoon cinnamon

1/2 teaspoon vanilla extract

¼ teaspoon salt

¼ cup granulated sugar

1 tablespoon flour

1 tablespoon ground almonds

1 egg, beaten

4 tablespoons butter, cut into cubes

Preheat the oven to 400F. Roll out pastry crust into thin rectangle.

Toss sliced plums with cinnamon, vanilla extract and salt. Let it sit for 30 minutes.

Mix the flour, ground almonds all but 2 tablespoons of the granulated sugar, and spread onto the middle of the pastry dough, leaving a 1 inch border around the edges.

Carefully place the plum slices over the floured dough, pouring the excess sauce over the plums.

Slowly fold the edges over the plums, brush the sides of the crust with the egg wash and sprinkle sugar over the edges. Dot the butter all over the plums.

Bake in the oven for 30-40 minutes until crust is golden brown. Remove from the oven, let it sit for 10 minutes and then serve with ice cream.
