Madeleines


130g sugar
112g AP Flour, sifted
1/2 teaspoon baking powder
Pinch of salt
Zest of 1 lemon
1/2 teaspoon vanilla extract
2 large eggs, at room temperature
95g unsalted butter, melted and cooled slightly

Combine the sugar, flour, baking powder and salt in a medium mixing bowl, stirring with a wooden spoon to blend. Add the zest. Stir in the eggs, mixing just to combine. You do not want to incorporate too much air into the batter. Finally, stir in the butter.

Chill covered for at least 1 hour. This is important as it ensures higher rise during baking.

Preheat oven to 400C. Pipe into buttered and floured madeleine pans, and bake in oven on top rack for 7 minutes (11 minutes for larger pans).

Immediately pop out of pans after baked, then sprinkle powdered sugar and serve immediately.

Mmm I'm a fan of super lemony madeleines so I generally use the zest of 2 lemons (extreeeme) but I've never tried serving with powdered sugar, will let you know how I feel about it once I get home. I'll probably love it since I've got such a sweet tooth! Again thank you for your chocolate cake of awesome it was moist and delicious even when I ate it the next day :)
